Kiddie Breakfasts

My 2 year old son has been eating Kashi's Heart to Heart cereal (not vegan, has honey) with soymilk and sometimes likes granola.
On weekends I make him buckwheat applesauce pancakes.
He's at the age where "trying" something is a burden to him (even if it's a piece of chocolate!)
What I'm saying is, he won't eat tofu scramble, for sure.
He loves what he's eating but I'd like to give him more variety for breakfast... I just can't think of anything!
He's not into hot cereal and gets plenty of fruit during the rest of the day... hmm... 

I know many of you have young kids... what do they eat for breakfast??

Try some french toast, homefries, toast or a bagel with some kind of veggie spread on it.

I did this recipe recently I don't know if you'll like it.

Take the egg foo young recipe from www.vegcooking.com and make it into mini individual ones.

Take a mini lightly buttered bagel and a couple of slices of veggie bacon  put the bacon on the bagel and put it in the toaster and toast it until how you want it (the bacon and the bagel but the bacon more). Watch it that it doesn't burn.

And then put one of those eggs in between and then munch.

I'm assuming it's "egg" and vegan, right?
I don't know if my 2-year old will go for it but I think it sound great!
We try not to use processed bread so I'd have to make bagels, so it sounds like a yummy weekend treat to me. :)

I'm so sorry Jennifer I know what I did wrong. It's www.chooseveg.com go to under dinner and it's called Mock Foo Young.

I left out the sesame seeds and the carrot. I don't know  to me I like it. You can also add a slice of veggie cheese in between to melt.

Oh cool, I found it, thanks!  ;) It does look good! And actually pretty mild in flavors so maybe I can get my son to try some. :)

we make "french toast" with fresh maple syrup.  not exactly sure of the recipe, but it is soy milk, bananas vanilla and cinnamon all blended together and then dip the bread into into and broil until nice and brown.  It tastes like banana bread, very good!!!

I make muffins pretty often.  It doesn't take much time, either, because I mix dry ingredients and the wet ingredients separately the night before, then stash the wet stuff in the fridge.  In the morning, I'll preheat the oven while I shower, quickly mix the batter, then bake the muffins while I finish getting ready.

Would he like different varieties of pancakes and/or waffles?  Applesauce buckwheat sounds tasty but there are a lot of variations in VwaV.  (My personal favorite being the lemon corn waffles).  What about fresh fruit with some yogurt and granola?  Or different flavors of oatmeal?

Also, veggie bacon sandwiches?  I used to love bacon sandwiches when I was a kid.  Just a couple slices and toast with maragine on it.

Try not to worry too much or make an issue out of it. Just for the record, when I was two I went through a phase where all I would eat was Cheerios, apple juice & american cheese. My mom says it drove her crazy to try to get me to eat something different & once in a while she could get me to eat a hot dog(of all things! ugh). The doctor said it was just a normal phase & not to worry too much & I grew out of it. Within a couple years I tried anything that was put in front of me.

OH I'm not worried at all. I'm just trying to mix stuff up a bit. And give him a variety of things that he will like. ;)

Hi Jennifer, my sentiments exacly. I have a 3yr old and she is picky too, specially in the mornings.
I don't have much time to cook waffles or pancakes for instance, because I also do spend time raw juicing in the mornings. So I just buy waflles. The brand is  Van's. They are the buckwheat kind. They are dairy free, eggless,glutten free and wheat free.Totally vegan!They are also 12% fiber and have 24g of whole grain. I just put cut up strawberries, bananas,blueberries, orange and rasberries and spread them on top, sometimes she preferes with just strawberies and rasberries on it. I give her orange juice or chocolate hemp milk, her choice. She loves it.
Then another hour or two she will ask for a snack and the only options are it's either Kashi or sugar free oatmeal with fruit salad. I give her what she wants first but then she needs to have what want her to have it and normally it always works that way better. :-\

Some mornings when she is really hungry she will have roasted potatoes and oatmeal like her father, she also loves vegetable juicing but I mix  it with water.

She also absolutely loves Cinnamon raisin toast. I buy this one from the Vermont Bread Company which is 100% whole grain. It's delicious.

I don't have children myself, but my parents were always pretty adamant that we eat at least a little bit of every food they cooked.  Sometimes they never made us eat more than a bite of it, but it was still enough to introduce us to new food and develop a taste for "strange" foods over time.  I'm grateful, because I think it eventually made me excited to try new foods.  On the other hand, this could be difficult at breakfast time if you have to get to a job or school, since it often requires a lot of "sitting time" at the table.
