Wow! Tasty enchilada pie.

I came up with this casserole & it was great! The tofu mixture made this dish!!

In a baking dish, layer:
> refried beans -- I make my own so they are nice & creamy
> corn tortillas - the soft ones, not crispy
> Spanish rice
> tofu mixture
> enchilada sauce
> minced onioin

Tofu Mixture:
> 16 ounces tofu -- drained & mashed to a ricotta-like texture
> 1-2 packets of taco seasoning mix. Ortega makes one with chipolte flavoring that is really good!
> 1/2 cup of Dragonfly's prepared cheeze sauce
> chopped olives
> diced onion

Next time I make enchiladas I will use this tofu stuffing.

Are you going to post this recipe so I can add it to my list?  It sounds great, however, where do I get the cheese mix?  I usually use the block kind from the specialty store.

that sounds just heavenly, but i would probably add a little green onion into the tofu mixture out of personal preference

that tofu-cheeze mix sounds absolutely fantastic. flavoring it with taco seasoning and Dragonfly's cheese-sauce is an awesome idea! That definitely sounds like a good taco filling for when I get back home-- I might make my own taco-seasoning mix though, because 2 envelopes would have an outrageous amount of sodium; the commercial mixes are almost all salt... has anyone found a good one that isn't so sky-high in sodium?

has anyone found a good one that isn't so sky-high in sodium?

I used one packet of taco seasoning & then added some additional ground up chipolte pepper flakes & some adobo seasoning. It has a nice little bite to it.

making your own taco seasoning is not hard!

add chili powder, paprika, cumin, onion powder, garlic powder, sugar, salt, oregano.

you can add other things according to taste. just play around with it. i never use measurements, so i wouldn't be able to give you an accurate recipe. sorry

I am a HUGE fan of Mexican type dishes and this one sounds HEAVENLY!!!! Though I would like an opinion.  I CANNOT stand the reg soft corn tortillas, think this would still be good with flour? I like the organic whole wheat flour tortillas....

I made nachos using Dragonfly's cheeze sauce, salsa, black beans and veggies, and they were out of this world-- it really shines in Mexican cheese sauce context, ooh yeah!  And it just tastes good seasoned with cumin.  I licked the cooking spoon!
