what can I scramble??

I've been looking for a good eggy type breakfast scramble...but i can't eat tofu.  Any ideas of what else I might be able to scramble up that would take the place of a tofu scramble??

Can you eat tempeh?  If so, just scramble up some tempeh & potatoes with your choice of seasonings & veggies.  Just make sure you steam your tempeh first, to remove the bitterness.  I like to marinate mine as well.

I have also used smashed up garbanzo beans in place of tofu.

tempeh is still soy isn't it?  I can't have soy really.  It' aggravates my thyroid condition.  Smashed chickpeas sounds good though.  What do you put in them?

the only other type of scramble I've heard of is chickpea scramble, like hespy suggested.  I've always been scared of anything that's not a tofu scramble!
Let us know what you try.

This would be way complicated, but can a tofu-like cake be made from other legumes, like chikpeas?  If so, you could make your own at home and have a supply of non-soy tofu to use.

Just an out-there kind of thought.  :D

Here is a Burmese chickpea variant of tofu I found a recipe for online.  But it doesn't use a coagulant as do the soy tofus.  I wonder if you were to use a coagulant, if you'd get something more tofu-like?

I sometimes like to "scramble" potatoes with peppers, mushrooms, etc... whatever veggies I can find. It's one of my favorite meals.

I would saute any veggies first - I like mushrooms, spinach, & onions.  Meanwhile smash chickpeas in a bowl & add whatever seasonings you like. Then add to your veggies & cook to your liking.  I also like to add fried potatoes into the mix after everthing is done- I fry them first and set aside.

Something else to consider - they do make a tofu out of peanuts.  I've never tried it, but I'm sure it's delicious.

I agree with Misa:  I love potato scrambles.  If you add a cheesy or nutty sauce that has protein in it, then you don't really need much more than vegetables to round out your scramble.

Perhaps other beans would scramble like chickpeas do (maybe pinto, kidney, or great north?) ...

I was going to suggest peanut tofu.  I have never had it but I am really curious to try it.  I may order it just to try it.  I am willing to bet that you can make tofu out of most anything if you have a tofu press and soymilk maker.  You can make almond milk, or hemp milk or whatever and make tofu out of that, if you are willing to experiment.  I got sick off of hempseeds  :'(, now I hate hemp, anything hemp, I don't even buy hemp milk for my son anymore because I get nauseated at the smell of it.  He drinks soymilk now.
