Seitan ScrambleIngredients (use vegan versions): 1 bell pepper, chopped
1/2 onion, sliced
handful white mushrooms, quartered
handful carrots, shredded
1 - 8 ounce package seitan, diced
1 tablespoon soy sauce
freshly ground black pepper, to taste
any other spices you wish to add
2 to 3 tablespoons olive oil
Directions:1) Have all your ingredients ready to go.
2) Heat 2 tablespoons olive oil in a fry pan. Add diced seitan, soy sauce, pepper, and spices. Cook for about 5 minutes, or until seitan starts to brown. Add sliced onions and cook for 3 minutes. Add chopped bell pepper and shredded carrots and cook 2 minutes. Add quartered mushrooms and cook 2 minutes.
Good served with breakfast potatoes and ketchup
