veggie throwdown

Hey Everyone,
So my friends have challenged my boyfriend and me to a veggie throwdown: a vegan cooking competition between them (non-vegans) and us. The judges are a few of our friends: one is a veggie, two are omni, but with Indian origins so their used to non-meat meals being tasty too, and two are straight up omni's that really dig their meat. Any ideas on what we should cook that would be super tasty and omni-friendly? I'm thinking that maybe we should avoid tofu because it freaks a lot of people out, but I'm unsure... Ideas??? Any recipes that you know on here (or from elsewhere) that would fit the bill would be awesome ;D

If you do use tofu, make sure you drain it by wrapping it in paper towels or a clean dish towel and pressing it by placing a heavy object on top.
