Vegetarian Luau? Is there such a thing?

In our own dysfunctional way of telling the Winter to $@#% off, my roomate (the owner of the house I live in, actually) decided to have a hawaiian party at our place. Great for drinks, however, I am trying to find veg'an recipes, because I do not want to be eating ham and pork... beurk... And by checking a few websites, I realize there aren't many vegetarian hawaiian recipes out there, or at least, none that I can find anyways.

I will be making coconut cupcakes, pineapple hummus, but I need more ideas? Have  you got any?

Bear in mind that unfortunately, I can't eat tofu or any fake meat  :'(

You could do some kind of Caribbean black beans with pineapple...that's tropical enough!

Muchas gracias, chicas... I actually searched for hawaiian recipes on here, but I should have checked under Luau, of course! :D

Any tropical recipes up to this point would be great... so thanks!  :D

I also got a whole lot of fruits : strawberries, bananas, mangos, pears, pineapple, lychees (I know... I just wanted to buy lychee... not sure what to do with it yet)

I have this book called "a vegan taste of the Caribbean", and it has a lot of recipes using black eyed peas. Also some using plantains and other starchy staples like that...then lots of drinks in the back! Maybe some fried plantain slices, and then a rice and black eyed peas dish?

Oh! This sounds really great!  How about teriyaki grilled pineapple slices for "burgers" with all the fixings, some kind of tropical shiskabob--pineapple, coconut, tofu, peppers, etc?

Haupia(coconut pudding)   is apparently a luai staple:

Ingredients:
2 cups coconut milk
1 cup soy milk
6 tablespoons sugar
5 tablespoons cornstarch
1/4 tsp vanilla (if desired)
Preparation:
Pour one cup of coconut milk into a saucepan. Combine sugar and cornstarch stirring into coconut milk. (Add vanilla is desired) Heat over low stirring consistently until thickened.
Add remainder of coconut milk and whole milk and continue to heat until thickened. Pour into 8 inch square pan and chill until firm.

The recipe can be easily modified for personal taste using more or less sugar and cornstarch.

Mango Bread:

Ingredients:
2 cups flour, sifted
2 teaspoons baking soda
1 teaspoon cloves
1 teaspoon allspice
½ teaspoon salt
1½ cups sugar
3 eggs (flax or applesauce sub?)½ cup vegetable oil
½ cup melted butter
2 cups partly mashed, partly diced mangos
½ chopped macadamia nuts
Preparation:
Preheat oven to 350 degrees.

Grease and flour two loaf pans.

Combine all dry ingredients.

Beat eggs.

Add oil and butter and beat for approximately 2 minutes.

Add dry ingredients and mangoes. Add nuts.

Bake 45-55 minutes.

Aloha Sweet Potatoes

4 to 5 medium sweet potatoes
1/2 cup butter
1 cup brown sugar
1/2 cup water
1/4 cup shredded coconut
Boil sweet potatoes in their jackets until tender, about 25 minutes. Let cool, then peel and cut into
slices 1 1/2-inch thick. In a large skillet melt butter. Stir in brown sugar and water and cook on medium heat about 5 minutes. Reduce heat and add sweet potatoes to skillet. Cook gently; tossing lightly until sweet potatoes are glazed. Sprinkle with coconut before serving. Makes 8 servings.

Note: Canned yams can be used in place of sweet potatoes.

I think I made them all vegan--but Imigt have missed something...obviously sub non-vegan stuff out :) I really want to make those sweet potatoes!

Yum, thanks Capture... I actually checked the hawaiian.about website, but I got stuck on the drinks recipes and when I checked on the recipes, all I saw were fish ahi ahi something, pork, etc.

I took all of your ideas in note, the problem is that I'm working today until 6h45, and knowing some of my friends, they'll be here early. But hey, nothing is wrong with people arriving and me cooking at the same, it's all good. :D

There's Poi, which is made with Taro root and traditionally eaten with your fingers...and you could do some BBQ roasted veggies.
There's another name for Taro root, but of course I've drawn a blank, nocherly.

That mango bread looks like it rocks, srsly hard.

Gazpacho being from Spain, no, I wouldn't think so... :-D But hey, it's her party, she can eat if she want to!!

Thanks for these ideas!  One of my friends was just accepted into Teach for America and placed in Hawaii, so we are having a Hawaiian party on Friday.  I am also going to make the Pineapple Right-Side Up cupcakes from Vegan Cupcakes Take Over the World and Pina Coladas!
