Vegan Pastry

Hi there
I am South African and we don't have many of the vegan packaged foods, nor can I afford the ones that are imported. Being recently vegan and it being Mid-Winter here, I am trying to change my normal mid-winter celebration foods to vegan. I am having difficulty with finding a vegan fruit mince pie pastry recipe, that doesn't use packaged vegan ingredients (like egg substitute).
Any advice?
Maybe just mix up some existing recipes?
Here's one you could start with:

You could always use substitutes for the substitutes. An egg replacer like Ener-G may be able to be replaced with arrowroot or cornstarch, or ground flax seeds. It may take a couple of experiments to get it just right but it seems that dough is a relatively easy thing to make without special ingredients.
What about this recipe for Veggie Mincemeat Pie?

For the pie crust part, you can use a non-dairy butter or margarine.

Thanks, This helps!
