vegan cheese

I want to try to make vegan cheese like a block of it using tofu and or soymilk but no nutritional yeast in it. Do you think it will work? And if you do do you know of any recipes for it?

I want to try to make like mozzerella, swiss, American cheese.

There's Joanne Stepaniak's "The Uncheese Book".  I had it on my Amazon wishlist but since I *will not* buy from them until they stop stocking items about dog and cock fighting, I don't have an on-line source for it.  It's been mentioned here on vegweb, though.  You might be able to get someone to tell you whether it would be what you want.

I had done it before follow a cookbook" The Ultimate Uncheese Cookbook".  I love the Buffalo Mostarella.

2 cups water of plain soymilk
1/2 cup nutritional yeast flakes
1/3 cup quick rolled oats
1/4 cups tahini
1/4 cup arrowroot or cornstarch
3 to 4 tbsp lemon juice
1 tbsp onion powder
1 tsp salt

cook everything in a sauce pan until very thick than put in a 3 cup rectangular mold.  Cool uncover in the refrigerator.  When completely cool, cover and chill overnight.  I can slice it once it set, but it will not grate.  It is yummy!

I think you're not going to find any uncheese recipes that don't have nutritional yeast in them.  There's this on-line source:

but to make it economical enough to make uncheese you probably need to go to a Whole Foods or other health food store with bulk bins that stock it.
