Umeboshi Plum Paste substitutes?

Hi! I just got the Ultimate Uncheese Cookbook and am uber-excited to try some of these recipes. Any suggestions on which ones are the best?
One question - what is Umeboshi Plum Paste, and are there any substitutes in case I can't find any by the time I make any of these recipes? I'm going to check my local health food stores and try to find an Asian market near me and check there too, but just wondering if there are any decent substitutions if needed.

Theres a thread about the cookbook. Some one said that you should use the exact ingredients of what it says, i've never tried the cookbook though. Hopefully that thread helps!

Haha, thanks. I didn't even think of checking for a thread about the cookbook... that would've been the logical thing to do. :)
umeboshi plum paste is a pretty unique product with unique taste and qualities, so I would probably follow the recipe with this ingredient. a thing of this will last a long a looongg time, and will only set you back about 5 bucks...plus you can use it to make salad dressings and in other macrobiotic recipes :)

the umeboshi paste around here is way more than $5.oo- like between $11.oo to $16.oo. Dalida is right about it lasting a looong time ...and it is really good smeared on corn on the cob in the summer...also really good for a hangover... just in case. ::)

Same here. I'ts about $11 at Whole Foods but will last a long time since you need very little. It's super-salty but also really alkalizing, and a bit of a superfood in terms of health benefits. There's a great sushi place in my city that makes a really good umeboshi roll.
