Too much celery and garlic! What should I do

So I have 5 bunches of celery and about 50 heads of garlic.

Can I dice up the celery and freeze it for use in soups down the road? Can I freeze garlic? Dry it? How do I store this bounty??

you can make a whole bunch of mirepoix/ holy trinity-type sofritos....saute any combination of  onions, garlic, celery, carrots, bell peppers etc for a base for sauces and freeze...

I don't know about celery, but deff freeze the garlic.  I peel and then process huge batches in the food processor with a little oil, then drop the chopped stuff in ice cube trays to freeze, then pop em out and put in a big freezer bag.  When you want one, just grab one and pop it in the pan.

Awesome! I will do both as I have some onion and peppers rolling around the kitchen too. Thanks! I hate wasting food! Now I must brace myself as it's going to get stinky up in here................

roast some of the garlic!!! put it on bread or crackers or in soup or salad dressing.

Ohmygoshh i havent had roasted garlic in so so longg. Its my favorite!

Peel your garlic cloves and toss them in a blender with a cup or so of olive oil. The resulting "cream" will keep in the freezer without setting up. Put it in a glass jar or whatever and just dip out of it whenever you need some minced garlic. The oil and the cold keeps the attributes and flavour fresh without it actually freezing or going all gooshy.

That's a really good idea.  Then you don't have to mince garlic every time you need it.
