tomato sauce

We have a ton of tomatoes right now & I was thinking of making homemade sauce. Does anyone have a really good recipe that uses fresh tomatoes? Most recipes I've seen say to use canned tomatoes & paste. Can I just saute some onion, garlic & herbs & then add tomatoes that I've ran through the food processor & cook for a really long time? Or should I do something with the tomatoes first? Oh & the husband likes his sauce to be smooth marinara like, not the chunky kind
Be sure and get the skins off! It's easy enough - slice a shallow X on the bottom, dunk em into boiling water for a minute or so, and then pull em out. The skins will slide off easily, ready for composting! You also might want to remove most of the seeds. But yeah, you can just cook em up after that.
We always made our own growing up, put them into hot boiling water, then after about 1 min remove them and shock them in ice water, the skins burst and slide right off. Core em and puree if you want. My mom put hers through a food mill and then we canned them, also canning whole peeled tomatoes. If you make sauce you can can it, or just freeze it for freshness all winter. I think some of their sauces use a spice mix, but you can just make your own to taste!

I can't personally attest to the recipe, but I've seen lots of raving reviews on the forums. I used to loathe tomatoes, but that Sandwich That Got My Brothers to Eat Tomatoes converted me too. I can't get myself to keep them around the house long enough to make tomato sauce!
I made a "sauce" the other day out of 4 tomatoes (well, 2 tomatoes and a can of diced tomatoes, our other tomatoes went bad), a vidalia onion, garlic, a little olive oil, basil, a little salt and pepper, and oregano (I may have put some spinach in too, I can't remember if I did that though), and I made some linguine and put two cups of vegetable broth for it to boil in along with the water. After the linguine was finished and strained, I added a little earth balance to it and let it melt, then added the tomato mixture.
Katie said it was one of the best things that I have ever made.

I followed this for the most part, but used agave instead of sugar & let the tomatoes cook in the crock pot instead of on the stove. It really turned out good! Thanks!
Yay! I'm so glad it worked out for you. Good to know agave works well in place of the sugar. I love that stuff :)
