Tofu recipes

Just like with my bean recipe thread...

I want to slowly go back to a vegan diet, with my son and myself, but I want to make it a slow transition, and I don't want to be overly strict about it, otherwise I won't stick to it.

Right now there are two vegan recipes that I make weekly, but if I can build up my collection of vegan recipes that are REALLY good to say...8, then I think we will be transitioned.  Currenly I make black beans and rice, and tofu stirfry almost weekly (tofu stirfry sometimes 2x a week as it is my son's favorite meal!).  Problem is I don't have much money, so I want to concentrate on increasing my tofu recipe collection.  I don't really care for soups, and like hardy filling recipes that are pretty quick to whip up. 

I don't like vegan cheese substitues, they are NASTY, I have tried them all, and too expensive anyway, so if you can stay away from then, that wold be great. 

But I LOVE love love nutritional yeast.  So a cheese sub home-made with NY is great!

Suggestions for good tofu recipes that are good and filling that both me and my 1 year old son would like?  If you can provide a link, or a recipe that would be helpful.

I also make tofu scramble maybe once or twice a month. It's easy, fast, and you can use whatever you have on hand
I like to add baked tofu(I like the White Wave thai flavor) to pasta shells w/ peas or edamame and peanut sauce. I use the one from Vegan Vittles, but I know there are recipes on here
Cornmeal crusted tofu from Veganomicon is easy and makes yummy sandwiches
I often bake marinated tofu. I coat in nutritional yeast or a cornmeal breading. You can serve it w/ gravy and mashed potatoes, or steamed greens. or whatever.

I've had great success with tofu as a ricotta sub in lasagne. Layer the noodles with sauce, crumbled tofu mixed with nooch, frozen spinach, and a bit of lemon juice, and whatever veggies you and your son like - sliced tomatoes, mushrooms, courgettes, aubergine... I hated olives as a kid but he might be willing to try 'em!

I like a lot of the recipes in A Taste of Vitality - they call for some schmancy ingredients, but 99% of the time, it's things like flours and grains that you can just sub with wheat flour and rice. There's an entire chapter on tofu and tempeh dishes - and one for beans, fwiw. Ignore the photos... somebody's photographer is not doing the food justice. But hey, it's free, and the text is worthwhile.
