substitute for...bananas?

hey all ^^; 

through this process of hunting down new recipes to keep life interesting, i have noticed that banana seems to be a common substitute for a number of non-vegan foods, cheifly egg i assume?  whatever it is, vegans definitely seem to like their bananas ^^

the only trouble is, i am really very allergic to them  :'(

does anybody know a more or less safe alternative to banana in recipes?  in terms of consistency i suppose, or something that doesn't just liquify when you bake it >.<;

I know what you mean, when I first started out everything I touched turned to banana. Pancakes, cookies, cake... Then I discovered some recipes that seemed to use combos of baking powder and b.soda.. Or cornstarch and water. Or even types of vinegar and baking soda/powder (cant remember.) I dont know the exact measurements but if you look for the recipes you want on this site, I am sure you'll find some that wont have banana. Other than that try http://www.theppk.com/veganbaking.html This site has a list of substitutes for several things while baking (as well as recommendations as for which sub is best for which recipe) and also some great recipes of her own. The woman in charge, Isa, also put out a great cookbook I recently bought myself, "Vegan With A Vengeance" that is highly recommended :) She pretty much never uses banana to sub for eggs unless she is making banana muffins or something.

I use 3 different egg substutions: 1/4 cup blended soft tofu, 3 tablespoons flax meal or Ener-G powdered egg replacer (available at supermarkets) ;D

You could try substituting another mashed/pureed fruit/vegetable, such as applesauce, cooked and pureed pumpkin, cooked and pureed sweet potato, etc.

The applesauce might make some recipes kind of gummy, yet it works in some other recipes - I can't explain it! I haven't tried the sweet potato, but I've had success using canned pumpkin in a cookie recipe. It had a very unobtrusive flavour and a nice soft texture.

i think any sort of fruit mash will work...but i usually use 1/4 cup soy yogurt inplace of one egg

Organic babyfood works well, anything sweet and you don't have to puree it yourself. If you are making brownies, use plum or prune babyfood!!! You can't taste it at all, but it accentuates the chocolate taste.
