Strawberry balsamic vinegar - ideas for uses

So my parents got me an awesome bottle of locally made strawberry balsamic vinegar for Christmas and I'm not sure what to do with it.  I thought I'd just play around with it in salad dressings, but do any of you creative people have other ideas for it?

As part of a tofu marinade?

humm.. interesting. what does it taste like? sweet? tangy? might be nice on some cut up fruit.

That is EXACTLY what I was thinking. Pears w/ strawberry balsamic sounds tempting.

If you put some in a sauce pan and simmer it for a few minutes, it will reduce to a thicker, sweeter substance, this would be really good with  fruit (maybe strawberries) on bread, as a salad dressing (particularly on peppery greens like arugula) with some olive oil, s and p, on "ice cream", etc.

Ooooh.  I like the idea of making a reduction.  I opened it today and it's somewhat like regular balsamic vinegar, but the flavour is lighter and less acidic.  Plus it tastes strawberry-y.  Yum!  I tried it drizzled over mixed greens and pecans today and I think I will have to try it over fruit and some sort of frozen desert... if I get ambitious I might try making a strawberry balsamic vinegar sorbet.  Fortunately I've got a whole bottle to play with!

Balsamic vinegar and strawberries is also a traditional Italian desert, add vanilla soy ice cream and pour vinegar on top. I know it sounds crazy but it is in fact delicious!
