Anyone have any experience cooking steel cut oats this way? I was hoping to cook them overnight. Any suggestions or recipes would be helpful. Thanks!

They way I generally do it is use the same amount of liquid of choice, put it on low, mix in some cinnamon and sugar....go to bed and viola!

I did this once and haven't done it since. It turned into a sort of oatmeal gelatinous lump. I still ate it because it tasted good, but the texture was a bit strange. Just a forewarning!

i have a great recipe from my little vegan slow cooker book that we make all the time. I will post later, as I'm running late for work! check back tonite. its delicious!

I know there have been at least a couple threads on this in the past. If I weren't so freaking lazy, I would look them up for you!
Anyway, I make oats like this all the time and totally love it. I much prefer, though, whole oat groats to steel cut. They have more texture and integrity, I feel. I've also made steel cuts this way, though. I use a 1:2 ratio. Since I only make it for myself, I put half cup oats and 1 cup water in the crock pot and turn it on low before bed. In the morning, I scoop out, dress with raisins, walnuts, soy milk, and a sprinkle of celtic sea salt.

OK, so I tried it last night and it seemed to work out for the most part. I just did 1/2 cup oats to 1 1/2 cups water (per the directions on the oats) and turned the cooker on low. It was a little dried out around the edges this morning, but I just added a little more water and gave it a good stir. I added brown sugar and raspberries! Yum! Maybe next time, more water or less cooking time.
I would still love any recipes anyone might have! :)

Not all steel cut oats are equal! I have two different brands from Canada. One is President's Choice Blue Menu and the other is ???? (I threw the bag out :(). The PC oats were the first ones I tried and they were OK but nothing special. Then I bought a bag of steel cut oats and poured the contents in the round President's Choice Steel Cut Oats box because they were easier to store. (That's why I don't have the bag.) When I cooked the second lot they were lovely. The individual grains were separate and not a gluey mess like the first ones I tries. So, if your oats are turning out gluey or glutenous, try another brand.

Good to know--thanks! I just bought mine from the bulk bins at the HFS. Maybe I'll try somewhere else and see if I get different results.
