soy flour

does anyone use soy flour in baking or have any advice/experiences/etc with it? im not very familiar with it but my nutritionist reccomended using it in baked goods. (added protein as well as making the texture extra moist and flavorful) she gave me this soy cookie recipe that i cannot wait to try (with a mix of flours, soy margerine, coconut, oats, chocolate chips, and soynuts!) but i wanted to get a few opinions before hand. thanks!
i just got some bulk soy flour last night and i'm wondering what the hell do do with it as well. Have you made your cookies? How did they turn out?
i have a giant bag of soyflour that michael's mom gave me and have no idea what to do with it either. so.. help, people! ;)

after a trying soy flour in a few different recipes, i love it. i'm going to continue to use it in all of my cookie recipes. you only have to substitue about 1/4 cup for every 1 cup of flour needed, and a little goes a long way.
when i first the recipe i mentioned above, it made the most incredible cookies! they turned out very crunchy, moist, sweet, and unlike any cookie ive ever made. i think the soy flour really brings out the flavor and moisture. the only thing i should mention is the batter is going to taste a bit funky and taste nothing like the end result. (this could be a good thing if you tend to eat 1/2 of the cookie dough from the bowl before it makes it into the oven!)
ive also used it in cornbread and blueberry muffins which were also amazing. very moist! and soy flour also works as a perfect egg substitute. :)
I've made this cheese with soya flour. I like this recipe a lot actually, and it doesn't have nuts in it, which is good for people with allergies.
I make my own bread and I always add 1/4 cup or 1/2 cup of soyflour (sub it for the whole wheat stuff). I haven't ever tasted the dough, but the bread comes out great! I've also used it in muffin recipes with great results. I can't say that I notice a huge difference in taste or consistency, but I like having the added protein.
huh? so if the recipe calls for 1 cup of flour, i only use 1/4 cup of soy flour, or do i add 3/4 more of reg. flour? sorry, i must be reading this wrong.

I think she means for every one cup of flour in the recipe, use 1/4 c. soy flour and 3/4 c. regular flour. So the measurements are still the same, it's just a different make-up
