The secret's in the breading. The spices etc. So for tofu, I would sprinkle it with the spice mix you're going to use and let it stand for awhile, and then do any breading and frying or baking.
Here's one I love, for a small amount like say half a pound of tofu:
1 teaspoon garlic powder
1/2 teaspoon sage
1/2 teaspoon ground black or white pepper (I prefer white, myself)
1/2 teaspoon oregano
1/4 teaspoon sugar or sweetner
1 teaspoon paprika
1 teaspoon dry mustard powder
1 teaspoon onion powder if you can get it there
Mix well--all quantities are of course to taste.
I would sprinkle it over the tofu and let it stand at least 30 min before breading and proceeding.
I like PETA's recipe

I think mustard/nooch is kind of a weird ingredient, but it turns out tasty!
