Slimey Muffins :(

Every time I bake a cupcakes or muffins they get moist and slimey on top within a day or two... does anyone know what I can do to stop this? I hate throwing them away :(

All i can think of = EAT THEM FASTER!
Haha, not really (though that would work!), that has happened to me too! I dont know what causes it, i thought it was just humidity? (even though they're in closed containers so that doesnt make too much sense)
Theres my answer that helps to no extent, but i want to know why too!

How do you store them?  Are these frosted cupcakes or unfrosted?

I think you probably wouldn't want to store them in the fridge.  Too moist.  I did a quick search, and I read that even professional bakers freeze their cupcakes--frosting or not!  Even if you are going to eat them in the short term.  Worth a try I guess.

I think it would probably be best to store them in an airtight container.  Maybe put a paper towel down over the top to absorb moisture?  I don't really know.

How slimy do they get?  I've never had that happen before...my first thought was with US...eat them faster.  :)

I have noticed it only happening on unfrosted muffins... I keep them on the counter in a tupperware container... Gosh I don't think I can eat them faster especially when this happens in the first couple of days... I would probably explode :(

Are you putting them away before they are completely cooled? It sounds like condensation is causing them to get squishy. If you aren't letting them cool completely first, try that before you put them away and see how that goes. If that doesn't help, you might want to try storing them in the fridge or freezing half after you make them (they refluff up in about 20 seconds in the microwave).

The slimy is from not cooling completely before you store them.  After baking put them on a rack to cool to room temp.  If you have to leave them alone before they are 100% room temp then simply put a big bowl or pan over the top of the rack but not blocking all the air.  Then store in a loosely closed container.  You want a minimal amount of air flow, not too much to dry things out but not too much to make any temp diff cause condensation and thus slimy tops.

Its really sad when you realize your baked goods went south.  :(

Cali explained it well. I usually wait 15 minutes after I pull the  muffins out of the oven before transferring to a wire rack to cool completely. The first day I store them in a plastic container, with the top loosely off. After that, I tend to store them in the refrigerator or freezer and reheat later.
