Rice recipes

This one can probably be combined with my "bean recipes" thread. 

I bought a rice cooker yesterday in an attempt to make myself eat more rice, less pasta.  I think rice is healthier than pasta and the rice cooker makes it so easy to make rice!  (brown rice is also a lot cheeper than Whole Wheat pasta, and I am trying to get away from refined stuff, such as white flour and white sugar)

Yesterday I discovered a recipe that turned out VERY good.  I used to like to eat "broccoli, cheese, and rice casserole".  Well, I am trying hard to eat more vegan.  So I made a "broccoli, un-cheese, and rice casserole".  Instead of cheese and cream of chicken soup, I made up a batch of dragon fly's uncheese sauce (I have a container of the dry stuff in the fridge, stuff is awesome, really is), mixed it with some brown rice I made in the rice cooker, and cooked some veggies to go with it.  I didn't actually have any broccoli so I made it with carrots, celery and green pepper instead.  My son loved it.  I have to say it was pretty good!  I think that uncheese sauce has my son fooled, he thinks it is cheese.  ::)

Any other great recipes for rice out there?

I love to make fried rice out of leftover rice.  It has to be fully chilled, or otherwise the rice won't separate properly and it'll all just clump together.  But my friend rice is pretty simple, just stir fry some veggies, add the rice and a few tablespoons of soy sauce and water once the veggies are just about ready.  Or I sometimes throw in some sort of bottled "asian" sauce instead of the soy sauce and water.

This is good if you have leftover rice, particularly if it's a bit sticky and clumpy. Pack it into a pie tin as if for a graham-cracker crust, and top with tomato sauce, mushrooms, veggies, crumbles--whatever you would put on a pizza. You can add some "cheeze" if you will and bake until hot and bubbly. I call it "This is Not Pan Pizza."

Rice doused with hot milk and brown sugar or nectar and some fruit makes a good, quick breakfast. If your rice was in the fridge, heat it a bit in the microwave first.

i agree with the fried rice... i mix in frozen veggies, some green onions, sweet chili sauce, sriracha, and some braggs <3

I'm hopping on this bad boy! I made up way too much rice this week.

My main go-to rice dishes are fried rice, Mexican rice dishes, and "Zen Rice" (a  recipe from my book that is very simple - just tamari, olive oil, & nooch with some gomasio).

what about risottos?  a really hearty, tasty, warming way to eat rice, and you can pretty much put whatever veges you want through it too : )

you can also add rice to vegetable soups. i used to have a rice cooker.i ate rice and beans with veigies every morning. i miss that rice ccooker...

wow, there are some really great ideas here!  Especially the breakfast recipe and the rice pizza recipe, two I will definatley  have to try!  I have  never thought to use rice in place of regular pizza crust!  And  my son LOVES pizza! 

any good recipes for fried rice?  I love fried rice at chinese restaurancts, and I always preferred the vegetable fried rice even back when I was omni, but I never had any idea how to make it.

Here's how I make fried rice, and this is a little different than the stuff you get a restaurant.  I think it tastes just like a frozen dinner chicken fried rice (minus the chicken, of course) that my family used to buy all the time when I was younger.  The basis for the recipe came from a Better Homes and Gardens cookbook I have at home.

Fried Rice
Ingredients:
Baby carrots, sliced lengthwise into fourths
Celery, chopped to make the little "U"
White onion, cut into pretty large pieces
Mushrooms, cut into reasonable sized pieces
Broccoli, fresh or frozen is fine (just make sure you don't have too many stem pieces if using frozen)
Peas, frozen
Approx. 2 c thoroughly chilled rice (white or brown will work)
3 T soy sauce mixed with 2 T water

Oil up a large frying pan or wok if you have one.  I like using sesame oil, but peanut oil or just veggie oil will do fine too.  Throw in the carrots, celery, and onion and fry these for about 5 min, or until everything is at the consistency you like.  Then put in the mushrooms and broccoli and cook for a few more min, again, to taste.  Then add the rice and liquid mix, along with the peas.  Cook for another 3-5 min, or until most of the liquid is absorbed.  If it seems like you don't have enough liquid, which is totally possible with a lot of veggies or rice, just add more soy sauce and water in a 1:1 ratio as needed.  And enjoy!  This keeps well in the fridge for a few days, so I make up a double batch usually.  Also, it is very important that the rice is thoroughly chilled.  If you're in a hurry, throw it in the freezer for a while, but otherwise the recipe won't work.
