Recipes using coconut milk

Hi!
I bought low-calorie coconut milk about a month ago, and I need suggestions how to use it with tofu. Maybe a marinade? or baked?
Can you cook rice with it?
I think I would love the taste but don't want to make something that would be a disaster.

You could make a Thai curry using the tofu with your favourite veggies. Green, red...there are several. I like green curry best! Bake or fry your tofu, then make your sauce with the curry paste and coconut milk, add your tofu, veggies and cook till done.
I have cooked rice by adding a handful of grated coconut, I don't see that replacing all or part of the water with the milk would be any problem, as long as you like the taste of coconut, which I adore. Personally I might add half or a third coconut milk, the rest water. Give it a go and tell me what happens.

I do plan to cook rice with the coconut milk. I found one recipe cooking rice with coconut milk, adding cinnamon, raisins, and a pepper.
I would rather use one of your suggestions.
I cheat, I buy it in the Asian market. Cock brand is vegan. You could google though.

I know you asked for tofu recipes and for tofu, I definately vote for the Thai curry (red is my favorite).
But also you can try Jamaican Rice and Peas.........(we call them beans, which you can use red beans, kidney beans, or even pigeon peas).......it's simple and the base is just coconut milk and thyme. http://vegweb.com/index.php?topic=8697.0
I suggest adding a bit of sweetener to your cocunut base-especially if you do something spicy with it. I LOVE the taste of the spicy and sweetness together. Without the sugar, the coconut milk base tastes bland to me.
At the other end of the spectrum, you could make coconut cream pie or pudding with coconut milk and silken tofu. The Post Punk Kitchen ladies make one on one of their cooking shows. I forego the crust and just pour mine into pudding cups. ;D
i like replacing soy milk or water with coconut milk in my tomato soup. they make it like that at the indian resteraunt in town. i bet tofu would be good in there too!
I finally decided to cook rice using the coconut milk. I cooked 1 cup rice, using 1-1/2 cups water and 1/2 cup coconut milk. I added cinnamon, raisins and a bit of smoked red pepper! Sounds strange, but it was sooo good. I used it as a dessert. I re-heated a dessert size portion and used a bit of brown sugar and a splash of vanilla soy milk. I will try it cold tomorrow.
It was really nice and I was very satisfied with the choice I made. Of course I will try other recipes now that I have left over coconut milk in the fridge!
I recently made a rice pudding using basmati and coconut milk. Once cooked, I added dessicated coconut and sultanas which gave it a little sweetness - I liked it!
