puff pastry recipes

so, on an odd whim i bought a box of "accidentally vegan" puff pastry.  what shall i make with it?  will it work for croissants?  a couple of the mushroom-y recipes on here look interesting.  any thoughts?

I didn't realize there was a vegan puff pastry. What brand is it?

I used to make something with a crannberrysauce and brie cheese. I wonder what we could sub for the brie?

pepperidge farms is vegan.  although it does containpartially hydrogenated soybean and cottonseed oils, as well as a little high fructose corn syrup.
i don't know that anything could be an adequate replacement for brie, it has such a distinct flavor and texture.  maybe the dish would work with some type of ground nuts?  it would probably be different but also very tasty

apple turnovers or blueberry turnovers

The leading commercial brand is vegan.  You can buy a can of apple filling and make a strudel. It will take all of ten minutes and it will be delicious.

mmmm, I second (third?) the turnover/pie filling idea!  Yum!!!

Maybe try making a pumpkin pie filling, and rolling them up to make pumpkin pie turnovers?

Sorry, iron chef pumpkin thingy still in my head....pumpkin on the brain....

that sounds sooo good.. how about adding some tofutti cream cheese for a pumpkin cream cheese turnover.  sorry - i usually think that most things go better with cream cheese. ;)

ooh i like the pumpkin cream cheese idea.  i'm tryin gto cut back my tofutti intake tho.  i'm trying to learn how to live without partially hydrogenated oils.  which is, of course, why i bought the puff pastry containing them in the first place!
