Potato flakes

OK, so as VWers we all know that fresh food is tastier and way better for you than processed junque. That goes without saying. But I was thinking about potato-flake "mashed potatoes." You know, the ones that you mix the envelope with water and marge. Is that stuff nutrionally really horrible for you, or not? I mean, would you be better off shredding the box it comes in and eating that?

The couple of boxes of plain potato flakes I have looked at are just dehydrated potatoes.  I don't see it being that bad for you if not the same as regular potatoes.

as long as there isn't a bunch of crazy ingredients i don't see the harm, eat away!

I didnt know if maybe when they "flaked" the taytoes they leached all the nutrients out of them, or something. You know, like white flour.

I agree, check the ingredients. Some of them come with the flavoring packet that contains dairy. But if there's nothing bad, flake to your heart's content. I've found them especially good as a thickener for making extra-potatoey potato soup.

I've seen some that contain a mile long list of ingredients such as butter fat, hydrogenated oil, HFCS, artificial colors and flavors, etc. and I steer clear of those.  I buy the ones that have only one ingredient - potatoes.  This tends to be the cheap/generic/store brands.
