polenta?

I just bought a tube of polenta (pre-made) in hopes that Lyle (the babe) will eat it. You can slice it up and fry it like a patty.
I will give it to him plain, but for the rest of the fam, I am wondering what to serve it with?
Over pasta seems to carb/starch heavy.
As a side dish?
Maybe parm-style with sauce and cheez?
Anyone else ever buy this stuff? It is organic, and easy so I figured it would be worth a try.
Yeah, frying it in patties is good and easy.
You can also add liquid and stir it into a mush. This is the traditional way of serving it. It is basically 'grits' using regular corn rather than hominy. Cream is often added to it but you can just thin with water and/or low sodium vegetable broth. Polenta usually IS the starch on the plate so it is best served with something higher in protein.
So strange! I am home today, watching "Lidia's Italy" and one of her dishes was polenta with black kale and white beans. It looks really good. Just add liquid to the tube of polenta (hers looked like thick grits), steam some kale with a little liquid smoke (she added bacon, of course), then add the white beans. I'm totally going to make it this weekend.
ok, then, with beans and greens, just like all of my meals!
and guess what? Lyle does not like it. Surprise! haha!

Saute some mushrooms and onion (and garlic if you're me.) Layer the polenta with some tomato sauce, cover with the saute, and sprinkle with parm or use a cheesy type sauce. Bake in the oven basically to blend the flavours, about 20 min.
Mmmm...I LOVE polenta! I just found a new kind that has quinoa mixed into it! I thought that was genius.
Everyone has great ideas so far. Personally, I like mine sauteed in e.b. with a little nooch. And maybe some mushrooms like Yabbit said. It's also good w/ tomato sauce on top (and maybe a little daiya on top)

yeah, syrup or agave seem to help with most things. I am afraid I am setting him up to be a super sugar-holic! Do you think eating stuff with agave on it (not a TON) is better than not eating at all for an 18 month old?

I sometimes make polenta scramble by crumbling fairly-solid polenta in a pan with a dab of nondairy milk. I usually do them as sort of a sweet deal, with sliced fruit and sweet spices, but I imagine it would be as good if not better with savoury ingredients - sundried tomatoes, herbs, aubergine, shiitake... Or you could do a half-tofu, half-polenta scramble, and then it would be colourful! And more like a tofu scramble.

well, i know he won't starve himself. lol
he still nurses 3 times a day.
I just wonder if I should keep giving him the plain foods and hope that he will get hungry enough to eat it or make it easier on everyone and just smear a little drop of agave on it for instant gobbling.
When he doesn't like something , he ends up just throwing it around ! :)
