Please help me use up Ingredient X.

Ahoy folks! I thought I'd start a thread where you can ask for recipes and advice on how to use up an ingredient (e.g. a vegetable, fruit, grain, bean, etc.) of which you have lots and lots and lots; or which is new to you and you don't know where to start with it.
I'll go first. :P I have many, many tasty carrots from the farmers' market which I need to use before they go soft.
Recipes, please.
I know, I know, carrots - simple - should be a no-brainer... but I was not fond of them for a long time, simply because I'd never known anything but raw or steamed carrots with very little flavour. I like to do INTERESTING things with them. They're so adaptable! Gimme your adaptations! :D

I'm surprised you didn't mention it was Thai basil - there's a huge difference in flavour, and therefore uses.
But I will now display my ignorance with regards to oregano - there're two different kinds?!
I have rosemary and oregano I need to use...I'm not sure what kind :( It has big leaves, not small ones.

I have made delicious pesto with Thai basil. It's a bit different in flavour but excellent on baked potatoes.
Oh, thai basil... not really a fan of the licorice..

Lebanese Green Beans
Oregano is great for Greek Potatoes. It's pretty much roasted potatoes with lemon juice and tons of oregano. Also great for pasta sauce and pizza.
Rosemary is awesome with olive oil and white beans or in white bean/tomato veggie soups or rosemary roasted potatoes.
Think mint would be good chopped up and added to some coconut based curry? I have some mint to use up.

there is mexican oregano and regular... i dunno i have only bought it in spice form, the regular oregano... not sure what the difference is...

Mint = Tabbouleh. Basically chopped mint, tomato and cucumber dressed with oil, lemon and tahineh (if you want tahineh) on top of couscous.

If the Thai Basil is still good, I'm going to make a thai red curry paste from scratch to make a tofu/veggie curry.
Thai Basil is beautiful. It almost looks like marijuana leaves, exotic and quite the sight.
