Looking for easy gluten-free, nut-free and chocolate-free bakery recipe

I'm baking for a party this weekend and want to make sure all the guests have a sweet treat to eat.

One guest is gluten-free, nut-free and allergic to chocolate. I have no idea what to bake for him.

Any ideas for an easy recipe to knock out? Thank you for your help. :)

Im a big fan of Namaste baking mixes.  The vanilla cake and spice cake are divine and make great cupcakes.  I use EnerG eggs to make them vegan, and frost with some butter creme frosting made with EB. 

otherwise Im feeling time warp lemon bars.  I could convert the crust to GF for you if you want.  I have a similar non vegan recipe at home.

i use cherrybrook farms brand mixes. They may have a sugar cookie mix that suits your needs. But maybe fruit with a sweet vegan fruit dip (vanilla of course) or vegan rice krispie treat type bars made with gluten free cereal?

Thank you. I don't have boxed gluuten-free baking mixes but I have lots of different gluten-free flours and lemons for lemon bars. The crust for that recipe would be great if you have it, GF VegMom.

I have gluten-free brown rice cereal so rice crispy treats are an option too if I can find a good krispy treats recipe. I tried one on this site and it was too corn syrupy sweet.

I once made a gluten-free, nut-free vegan cinnamon banana bread recipe that was awesome.  When it was done, I cut it into little cubes and toasted them under the broiler (the toasting helps because GF baked goods tend to be rubbery).  I made the Namaste brand Toffee-Vanilla frosting and served the cubes with toothpicks for dipping into the frosting.  Everyone loved it, even the gluten-eating omnivores.

I'm afraid I can't remember where I got the recipe, but I fully acknowledge that it's not mine.  Here it is if you want to try it out.

CINNAMON-BANANA BREAD (GF)

INGREDIENTS
1. 1 cup Bob's Red Mill gluten-free, all-purpose baking flour
2. 1 teaspoon baking soda
3. 1 teaspoon baking powder
4. 1 teaspoon cinnamon
5. 1/2 teaspoon xanthan gum
6. 1/4 teaspoon salt
7. 3 overripe bananas, mashed
8. 1/4 cup canola oil
9. 1/3 cup agave nectar
10. 1/3 cup unsweetened soy milk
11. 2 teaspoons pure vanilla extract

DIRECTIONS
1. Preheat the oven to 350°. Lightly oil an 81/2-by-41/2-inch loaf pan. Line the bottom and sides of the loaf pan with parchment paper and set aside.
2. In a medium bowl, whisk the baking flour with the baking soda, baking powder, cinnamon, xanthan gum and salt. In another bowl, whisk the bananas with the oil, agave nectar, soy milk and vanilla. Add the banana mixture to the dry ingredients and whisk until smooth. Pour the batter into the prepared pan and bake for 45 minutes, or until a toothpick inserted into the center comes out clean. Let the banana bread cool on a rack for 20 minutes before turning it out. Let cool completely before slicing.

What about making a fruit tart?  Just make a GF pie crust and add in sliced fruits or berries and cover with a touch of simple syrup or caramalized sugar.

Thanks, Cali. That a pretty idea too, especially with my recent score on strawberries and blueberries. Problem is, I don't have an easy, no-fail GF pie crust recipe. If I have time, I'll stop by Whole Foods to see what they have to make my GF bakery easier.

Oh and one more thing Cali! I have a small present for you from my recent trip. Thought of you when I saw it. I use the Klean Kanteen and goth tote bag you made me all the time from the gift exchange and think of you. :)

I wish I had a pie crust recipe that I knew worked but I rarely bake Gluten Free. :(

I am so glad you use the goodies!  Your my favorite spooky gift exchangee.  :)  I still have one crafty item in the midway stage of creation to finish for you.  But its more personalized than some silly Earth Day exchange. heheh  I promise to finish it this month!

I couldn't find the Namaste vanilla and spice baking mixes. And I read mixed reviews about the Cherrybrook Farms so I didn't want to chance it.

I tried that banana bread recipe. That actually came out better than the recipe in the babycakesand another cookbook for me. Evenly cooked and not goopy. I just don't like the Bob's Red Mill GF flour mix. Weird aftertaste. I can definitley work with this recipe. Thanks krs!

I'm glad you liked it Saskia.  My gluten-free friend said she's been craving it since her Super Bowl party.  That's why I cubed it and served it with the frosting, to serve the crowd.  Everyone also raved about the Namaste frosting mix, but if you go that route, I'm sure any frosting would be great.

vegiac.com can be quite good. cookies i used to find quite nice too bake even GF- could use apple cinnamon, vanilla or maple falvours. molasses actually! otherwise i use nuts in a lot of things since it helps with GF. Good luck!

Thank you. The banana bread batter was yuck yuck but after it came out of the oven and cooled, I enjoyed one piece, and then another, and they were quite tasty! I did bake it in an 8"X8" pan instead of a loaf pan and think I liked it that way better. Also easier to cube.

never sample gf batter raw. It is horrible and the raw bean flours can cause tummy aches

I like the apple cinnamon suggestion. I bet fresh chopped apples and cinnamon would make a great combination.
