Lemon Pie help requested!

Hi all!

I want to make a lemon pie with some sort of fluffy vanilla topping ala Meringue.  But I only have things like Mimicreame and Condensed Soy Milk, though I could also go pick up ricemellow fluff.  Any ideas?  I want to make it today. :/

The pie went naked!  I did top it with some strawberries and powdered sugar but I wish there was some kind of meringue or sweetened whipped cream (but firmer) that was easy and fast to make. :/

I would have recommended a box of Soya Too whip topping, but I don't like it.  It takes like soy.

How is that packaged? Is it frozen or is it a powdered mix? I've never seen it before, and I wouldn't even know where to look.

What about cashew or macadamia nut cream?  I don't like "pudding" pies unless they are chocolate, so I really make a guess as to how it would turn out.  A dollop of the cashew cream is good on chocolate pie though.

It's in the refrigerated section, next to the cans of whipped topping.  Soya Too used to be only a canister.  It's up to almost $6 a can.  Next to it at my hfs, there's a box of Soya Too that you can whip at home yourself.  The box is about $3 a box.  It's about the size of a box of silken tofu.
