Leftover Rice Question

I frequently have leftover rice, and need some new vegan ideas for what to do with it.
I already use it for fried rice, and for coconut rice pudding.
I need some other ideas that are NOT:
1. desserts/sweet
2. too exotic for European/American tastes (I've served too many Indian/Moroccan, etc recipes lately)
3. don't involve fruit
I'm looking forward to suggestians :)

white rice can be used for sushi rice
i've seen brown rice used in many veggie burger recipes
-Make it into a hot cereal for breakfast with some soy milk, sugar and cinnamon (I don't know if this violates your "not sweet" rule though)
-Use in salads, similar to pasta salads (there are some rice salad recipes on here. Everyone likes the Lentil Rice Salad http://vegweb.com/index.php?topic=18137.0)
-Add seasonings and/or vegetables and use as a filling for things like cabbage rolls or stuffed vegetables
-Use in cajun/creole recipes (jambalaya, red beans n rice)
-Add to soup
Rice and beans. Burritos.

They're pretty easy to make at home. Left over rice with some ginger,soy sauce, garlic, vegetables (I like carrots, mushroom, water chestnuts, red bell pepper, and edamame.) I use a mix of vegetable broth, bread crumbs, flour or corn starch to bind them.(If you're not vegan, an egg would help with the binding but I don't use one and mine still stay together.) Then I fry them in a little olive oil and dip them in soy sauce.
There is a recipe in the Betty Crocker Cookbook for spaghetti and spicy riceballs on pg. 374. I am pretty sure you can google this recipe if you don't have this cookbook. If not, I can post the recipe. My mom made it for me on my b-day. It is delicious and is standard American fare.

I have been known to pack leftover white rice into a pietin as if lining it with crust, and then top with tomato sauce, olives etc. as if for a deep-dish pizza. Bake it until hot and bubbly. I call it "This Is Not Pan Pizza." Use whatever you would personally put on a pizza.
Bake it in a casserole! I use rice instead of wheat noodles when making pasta-bake type things - mix with veggies and tomato sauce and top with noochy sauce or ground almond/nooch sprinkle, or mix with peas or broccoli and chickpeas and creamy sauce of your choice - tahini sauce or nooch sauce or whatever. Mix it into a non-meat loaf, or mix it into veggie soup - if you puree it into a soup it works as a thickener like potatoes.
Rice is my staple food. Eat it for lunch with beans and a veggie. Wrap it up in a tortilla with beans for on the go snack or meal. Mix it into a casserole. Use it as the crust to an awesome kale and mushroom quiche. Eat it plain as a snack. Use it as a side to your next meal. Make meatless balls. Make meatless loaf. Serve it under leftover chili. Serve it under leftover marinara or other sauce. Add it to soup to make more portions.
In my opinion you can add rice to almost everything you eat. Well, except maybe potato and pasta. But thats just me not willing to pile starch atop starch.
