Leftover Coconut Milk - What to do?

Used about 3/4 cup of coconut milk in a recipe last night, and there was still at least 1/2 can left. I haven't really looked for smaller cans of coconut milk (say 15.5 oz vs. 8 oz), so maybe that's an option, but I'm a bit frustrated with what to do with the remainder besides use it in the next few days in another recipe. Can I freeze this? I was thinking since its "milk" no. Any suggestions besides eating coconut milk inspired dishes for one whole week?

I'm thinking I've frozen mine in the past & it was fine. I'm remembering that I did it in small segments too, so that I could just thaw a little at a time.
Maybe use it in a dessert of some kind - coconut icing for a cake, muffins, ice cream...
I've made this recipe using 1/2 cup coconut milk & 1/2 cup soy.

Freeze it. I do it all the time.
I agree with freezing it
Or take some avocado, some ice, and some palm sugar, add that with the cold coconut milk in the blender, and have yourself a delicious coconut avocado shake!!
