Ideas for using shiitake mushrooms

I bought some fresh shiitake mushrooms and wonder if y'all have any excellently delicious recipes that use them.  I've never cooked with them before since I can't get them in the grocery store here.  I'm curious what people think is really, really good with them.

- any sort of stirfry (sliced thin)
- in curry

make sure you remove the stems first. they're insanely chewy.

Soak them with mirin, sugar, and soy sauce, then stick them in norimaki with carrot, cucumber, and daikon. Or braise them in miso sauce. Or soak them, use the soaking water to make up some broth, and then cook noodles in the broth with the mushrooms.
