How to please my omni mom???

My mom will be visiting me next month and stay with me for couple days, and she thinks all I eat is mushy rabbit food and bird seeds =(
What are some easy, omni-approved dishes I can make??
I have veganomicon and how to cook everything vegetarian, what are some dishes that are really good and easy to make?
They don't have to be super healthy and nothing too adventurous like raw food.
No stir-fry recipe please, I could never make mine tasted authentic Chinese and I am pretty sure that will only appear to my mom that I can't cook and take care of myself.
Pasta with mushrooms in a hearty sauce, with good chunks of peppers, onion etc.
Chilli of different kinds (there are chili recipes on here that absolutely ROCK)
Mexican treats such as bean burritos, enchiladas etc. Again, lots of good recipes on VegWeb.

Soup! there are literally hundreds of delicious, filling soup recipes here.
Remember you can reduce or add spices, herbs, etc. to your own or your mom's taste. Without knowing what she likes/hates, it's hard to help. But cruise the recipe categories and have a look.
I do recommend Lucid Anne's wonderful "Lentil and Rice Salad." It's best made ahead of time or the day before. It is delicious! Again, ajust spices to your personal taste.
I've always used Italian food to win over omnis - it worked great for my family!
I'll second the Italian! I like to make this http://www.marthastewart.com/recipe/tomato-and-olive-penne minus the cheese. It's really simple and has always been a hit with people I've made it for.
Thanks for all the suggestions, I probably going to make dal, chili and cornbread and some pasta dishes. But since my mom is only used to eating Chinese food so not sure how would she like them.....
If you live in a city with a good asian grocery store, they may sell these wonderful veggie ham and chick'n breasts, even veggie fish that are imported from Thailand.
My omni parents seem happiest with very hearty, filling fare: tofu spanikopita in phyllo, pot pies with tofu, erzats meats baked into biscuits, etc... Hearty bean stews work pretty well, too. What are some of your parents' favorite styles of food or flavors or seasonings?
My mom is a vegetarian (lucky me!) but my bf's mom isn't. We always make tacos for her (with guacamole and lots of fixings) and she loves them! She likes things that are familiar to her. We always serve a good dessert too, which leaves her happy!
I usually pick a cool ethnic dish to wow omnis like lentil burritos served with all the fixings that they can use to build their own tacos. I also do chunky chili which has fooled several omnis with the veg crumbles. Pasta like people recommended is also good. I also love to make Pad Thai.

the moussaka from veganomicon is awesome and quite easy. its time consuming, but simple. my mom made the lasagna from it for christmas one year and her parents said it was hands down the best lasagna ever. i would suggest something like that, plenty of left overs, something warm and wintery, and delicious!!!
