Homemade stuffed seitan breasts

It occurred to me this year that I should try taking my favorite chikn cutlet recipe and stretching the gluten very thin and wrapping it around some kind of filling to make individual stuffed seitan roasts. Sort of along the same lines as the celebration field roasts, except these would hopefully taste a lot better.

I know Bryanna Clark Grogan has stuffed seitan recipes but I don't recall seing one involving bread type stuffing. I am wondering if a bread stuffing would hold up or completely dissolve during the cooking process in my slow cooker. Maybe I should cook them at higher heat in the oven but risk getting tougher seitan.

Has anyone ever seen a recipe for something like this or tried it yourself? TIA!

I've not tried that type of stufing, but would be very interested to see how yours comes out ;)

The only type of 'stuffed' seitan I've tried is chikn kiev type things: these
They worked well, but the seitan bit needed tweaking.

I would have thought that if a margarine-y filling stays inside the seitan then a breadcrumb-y should hold up.
Oh, I've just seen that you want to cook it in the slow cooker.  Not sure if it would hold up in the liquid.  I'd go for oven baking it.
