fried plantain sauces

My Honduran student brought some fried plantain to a class party, served with a sauce of mayonnaise mixed with ketchup. I tried it, and it was very good, but I'd like to veganize it to make at home. Is there a vegan mayo that tastes like plain, unseasoned mayonnaise? I don't think Nayonnaise would be quite right.
Or, does anyone else make fried plantains with a different sauce? A Costa Rican student said in his country they use chile rellenos. I've never tried it before.
Ideas, anyone?
Oh...I see chile rellenos is not vegan either, and it's not a sauce. Hmmmmm.
A guatemalan friend of mine told me once that the best ways to eat plaintains was fried in mole sauce. I found a few recipes for the sauce....of which there are MANY variations. If you wanted to be really adventurous you could combine what you like best out of them and give it a shot! I've had mole before and quite liked it.

I've had several friends tell me that they eat tostones with just ketchup.

You can also eat them with a sprinkling of sugar, or mixed with refried (black or pinto) beans.
vegenaise is the best vegan mayo, in my opinion.
