I have this recipe that you are saposed to freeze chunks of watermelon and then blend it later to make sorbet kinda thing, but in the end your going to blend it down anyways...Hmmm i looked on the web (Google: Can you freeze watermelon) and this what came up.
From: http://www.ochef.com/740.htm Q. Can you freeze watermelon? A. No. Water expands when it freezes and tends to break through the cell walls of fruits, vegetables, and meats that have a high water content or a delicate cell structure. And as you well know, watermelon is about 138% water and has a very delicate cell structure. If you freeze a watermelon, the only thing you'll wind up with when it thaws is a mushy pulp. A pretty pink pulp. With seeds.
so i guess if your only going to mush it up later then i guess it would be okay, but not in slices.. Hope that helps -Melissa :)

Frozen, thawed watermelon is gross, but I think that if you were going to keep it frozen in smoothie form, it might not be too bad. I bought a watermelon and am going to freeze part of it (in chunks). I'll report back.

I freeze watermelon all the time by blending into a liquid and then pouring it into ice cube trays. When frozen pop them out and use in smoothies. I even like putting the ice cubes in a bowl and eating them frozen...kind of like a slushy. Sometimes I pour the watermelon into popsicle molds with lime juice/zest--that's good too.

We made watermelon juice for my grandson this morning. I freeze it in gallon sized bags and break chunks off for smoothies. Yum!

Yeah, I was going to mention granitas too. There's a fun little book called Granita Magic that gave me the lime + watermelon idea.

I sometimes cut watermelon into small chunks (remove the seeds) and use in place of ice cubes in lemonade, or just eat them by themselves when it's hot outside. I'm sure it would be good in a smoothie too.

I've never tried freezing watermelon. Only berries to later use in muffins and things. I'll have to try all your suggestions of juicing and then freezing in ice cube trays.
