Food Preservation - A Pictoral Tutorial

I've decided to photograph the steps of different food preservation techniques.  I'll try to do the first one this weekend and put the steps with photos here.

I got a pressure canner this summer and I've been waiting for it to cool down before I use it.  It's finally getting chilly.  In honor of that, I'm going to do a chili canning tutorial sometime before the end of the year.

also: totally excited about this.  But I can be patient. Honest.....

You can also preserve things by fermenting it and turning it into wine. ;D

So, maybe this is a crazy question, but here it goes:

I have a friend who is very allergic to carrots (as is my father), which makes it hard for her to find soups to eat.  She specifically wants chicken noodle (which I would only make because I am a terribly good friend and don't try to actively discourage others from eating meat), but my bf likes my veggie soup a lot.  Anyway, so my question is could I use a canning process to preserve already made soup?  That way I could make up big batches and just throw it in jars for people I know...  Maybe soup wouldn't work the same way a jams and jellies though?

You can do soup.  You would need to process it in a pressure canner (different than a pressure cooker) instead of a boiling water bath.  You select your gauge weight and time based on which ingredient takes the most weight and time.  Also, if making vegetable soup, don't can grains in with the soup.  You can freeze cooked rice in individual portions and add it in when you reheat the soup, if wanted.
