What do you like to do with edamame besides salt it?

We like to mix the shelled with corn kernels, chopped red bell pepper, and chopped green onions, and toss it with garlic powder, basalmic vinegar, and a couple of splashes of toasted sesame oil. :)

That sounds good Bookmama! I'm almost embarrassed to admit this, but when I want something quick and tasty, I throw some frozen shelled soybeans and frozen broccoli into ramen noodles (Nissin Oriental flavor). I cook the noodles as directed, but less about 1/4 cup of water (because more water comes off the veggies). Then I stir in the frozen veggies and wait for it to return to a boil. Done in about 5 minutes.

I make a potato salad with lots of beans and peas, edamame being one of them, shameless plug time: it's under "Bean Salad" in the Salad category and is called "Warm Multi-bean Salad", I see it's been viewed a number of times but no one has reviewed it :'(

you could make an asian type noodle dish: take whole wheat noodles (spaghetti or angel hair) and cook. Then make a ginger garlic sauce, put steamed fresh broccoli and the edamame in it and add in the noodles. Voila! Really yummy. And quite green looking. The roasted sounds really good.

my recipe is a lot like "bookmama's"
edemame after bieng boiled for 2 minutes roasted corn chopped red onion chopped tomatoe(seeds removed) dash of ginger powder or fresh 1T soy sauce 1t dijon mustard fresh pepper and garlic....
delish! i made it for my family bbq yesturday along with my vegan 7 layer dip, sliced baked potatos and summer squash cous cous...
let me mind you...this is a group of 6 people who are no where close to being vegetarians

I made a "ranch" pasta salad for my omni parents and (picky) omni sister. In addition to the pasta and ranch dressing, I added red peppers, green onion, and edamame. I think the edamame was their favorite part! They loved it!

Edamame is also really good in cold pasta salad. It adds a nice flavor and crunch.
