easy quick meals ... ideas please!
My boyfriend wants to learn to cook more, though he is not very motivated.. he doesnt understand have to mix herbs and spice or what would be good together.
He is a busy boy and has little money, so these things influence his cooking too.
I have taught him simple things such as peanut satay sauce, good pasta sauce and some soups.
He will basically make a meal based on pasta or poatatoes. We make mash potatoes with a lentil and sauce. He thought this was good.
Other items we usually have, this gives you an idea of items he can afford and knows.
Lentils- atleast geen lentils, we never have canned beans... maybe baked beans once in a while
TVP
Tamari
Tahini
Coconut flakes or milk
Apple cider vinegar
Canned tomoatoes
Millet
Peanut butter.. sometimes
nutritional yeast flakes
Balsamic vingear
chilli sauce
Bread
Rice, not a lot though.
Vegetables:
Potatoes
Carrots or cabbage
Onion and garlic
Frozen spinach or corn
Celery root, beetroot or parsnip
We have most spices and herbs, he hates fresh coriander.
So some simple sauce ideas, fast easy meals... good for a beginner.
We have a blender or blender he likes to use them.
He is also vegetarian and not vegan, though the only thing he might use is cheese.. never any eggs.
A microwaved or baked potato topped with hummus and/or lentils is a quick, hot and filling dish. If he likes a little melted cheese on top, so much the yummier. I have several permutations on hummus. Lentil or blackeyed pea hummus is light and delicious.
I have submitted various soups made of the contents of my local Aldi's veg boxes. Easy peasy, just chop your veggies and boil them up with water or broth. i just taught him about cooking lentils. so i will try the lentil hummus- i make something similar but with turmeric and parsley, and no lemon
Only problem is we rarely buy peppers becausethey are so expensive... and i guess out of season.
we just made chilli tonight.. seems easy. we didnt have any corn.. so we just put in some spinach instead.
I recently figured out a cheap meal from stuff I can pick up at the Target at the end of my road. They've got no produce section, but they carry all sorts of canned goods/pastas/etc. Anyway,in one frying pan, combine: one box of frozen spinach (thawed first is best, though I often toss it in the pan completely frozen), one 14.5 oz can of diced tomatoes (I get the basil, garlic, and oregano variety) - not drained, one 15.5 oz can of either cannellini (white kidney) beans or great northern beans (drained and rinsed), one to two tbsp olive oil (optional), salt, pepper, and garlic powder to taste (have also done this with fresh garlic). Heat until warmed through. It's very good alone, though I like to mix it in with pasta. If you do that, the smaller shapes work best (rotini, piccolini, bowtie). I've also added between half a cup to a cup of water and one can of tomato sauce (I like the roasted garlic variety, but I've seen an "Italian" variety that would work well) and made a soup. This makes enough for between two to four meals, depending on how hungry you are, whether you add pasta or not, and whether you make it into soup or not.
I know you said you don't have canned beans, but you could really use almost any bean in this and if you have him make beans ahead of time and freeze in one cup portions, this would work well. In that case, use one and a half or two cups of beans.
This is one of my easiest dishes - and it's very economical, too.
Quick Couscous One Dish Meal
(super quick dinner for busy nights)
to prepare:
for each person dining, boil 2/3 cup water, add to the water a couple of handfuls of frozen veggies of your choice and a couple of handsful of drained beans from a can, or cooked beans or lentils (dried fruit is also an option). When veggies have cooked, add 1/3 cup dry couscous. Stir, cover, and remove from heat. Allow to stand 5 minutes. Couscous will absorb cooking water. Fluff with a fork and sprinkle with Lemon Pepper seasoning, or another favorite seasoning. Alternately, a favorite sauce can go over the top. Serve, sprinkled with nuts.
thanks! this are good ideas. I am teaching him how to deal with cooking raw beans, we just did red lentils.. they are the easist and next is chickpeas and kidney beans. I think he will buy canned beans when i go travelling maybe.
Soups or pasta sauces are good, he is going to make lentil sauce for pasta on vegweb, its easy and fast.
We dont really have couscous, i cant eat it.. but i think it would be a good quick food for him. I have millet.. but i feel he would probably burn it because he is very impatient...
We just made mashed potatoes and celery root which he liked and tvp with red lentils, squash, carrots and onions with a tahini sauce. He said it was simple... its nice to give him simple ideas.

We genearlly have more fresh things that anything packaged or frozen, some freebies each week helps :)
We have a small freezer, a mini fridge so we only have a bag of spinach at the most if its on sale. But i have taught him he can have grated vegetables by using the food processor and it cooks faster :)
He decided he will try and cook millet, it is a simple ideas the cous cous meal.. we dont have lemon pepper but we have pepper and i think frozen lemon juice or even cayenne pepper with it could be nice.

As a busy bachelor with limited time and resources (although I’m a pretty rockin’ cook) I think I’d be able to help with this one.
Teach him how to cook rice and how to cook beans! These are two super cheap items that when combined make for an awesome burrito! Teach him some basic southwestern flavors too: garlic, onion, cayenne, cumin, lime etc.
When I’m in a pinch I always take my leftover rice (like you already taught him how to cook!) and I do a stir fry with some frozen vegetables. Did you have a sauce with the peanut satay? You can tell him to double the batch and then he’ll have it when he needs it.
Another super easy meal is to heat a can of tomato soup with a can of non-dairy milk and then cook some shell noodles to toss in with the tomato soup. It sounds boring, but it’s delicious. That’s probably one of the first things I learned how to cook when I was like 8 or something.
Oh, tofu scramble too! Everyone should know how to do tofu scramble.
thanks for the tips vegan punk. The rice bean idea is good, because he can also use pasta or millet... any grain would be okay.
We dont really buy canned soup here, its shitty... to be blunt... but canned tomoatos would be cool.
Scambled tofu... im not so good with it. i make scrambled lentils :)
My favorite ever quick, cheap meal is actually quite simple.
1 lb. bag of brown rice
1 lb. bag of beans/lentils of your choice.
Cook according to package directions, mix.
Add a jar of salsa or tomato sauce of your choice.
Add salt and pepper to taste, sometimes I will add a little taco seasoning or red pepper for more flavor.
This makes a TON, so I'll eat it a couple days and then freeze the rest.
Caison.... 1 POUND each?? Holy carp batman. You aren't kidding when you say it makes a TON! :o
LOL....yeah. When I'm cooking, I'm at home and feeding 5. Two growing adults, usually two athletes who eat a ton, and I'll usually eat it for about a week at a time. Then I always have a ton of leftovers to freeze.

It tastes the same, although I think the texture is just a tiny bit drier. However, if you're putting a sauce on it or throwing the rice into soup or a casserole, you'll never notice. I really like to freeze rice, too! I make up a big batch in my rice cooker (I love this thing!) and freeze in 2 cup containers. It's also already separated into grains, so it's ready to go for fried rice dishes with leftover veggies.
I dont know how to explain it, but we dont have a kitchen. its called a tea kitchen. there is two hot plates and a mini bar fridge.. a little oven. so we cant really make big amounts of foodour freezer is that tiny one. you can only fit maybe two lunch boxes in there.
But i like the idea of rice and beans or millet but he needs vegetables.
He just found out he has no vitamin D... sad reality of living in denmark.
We just made Kind-of-Colcannon a sort of mash potatoes with a lentil sauce with roasted nori in it...
We are going to make some rice on sunday i think. well.. any kind of big meal so he can use it for his lunches.
I don't know *exactly* how big the pot is, but I use a big stock pot.
It freezes just fine, and I always use a little extra salsa/tomato sauce so when it reheat it doesn't dry out.
