does anyone have a recipe for an African Tomato/Curry sauce?

We were in Amherst, MA this weekend and tried a really delicious dish consisting of rice, beans, friend plantains and a really yummy sauce which added a great flavor to the rice and beans. It had a thick consistency, kind of like a chutney. It was spicy, but not real spicy.  It has curry in it, obviously tomatoes ... but I wonder what else. The curry taste was very subtle.... I so want to make this sauce, it was amazing!!!! :)>>> :D

For something pretty basic, you could probably just saute some onion, ginger and garlic in oil. Add tomato and curry powder and cook for a few mins. Add coconut milk, season with salt, heat through and serve.

If you want to do something more authentic, you're going to need to bust out some other spices. Turmeric, cardamom pods, allspice, cloves, cinnamon sticks, cumin seed, coriander seed, anise seed. Top with fresh mint and/or cilantro for a real treat.

There's an Ethiopian stew recipe in Vegan Fire and Spice it's good and has a subtle curry-like taste. 

onions, garlic and ginger sauteed about five minutes.  Add cayenne, tomato paste, salt, cumin, allspice, coriander, and tomatoes (1 can crushed, or diced), 1 cup of water, boil and simmer.  It calls for seitan, but I'm sure you can use tofu, beans or whatever.
