coconut flour recipes?

Hello! I just bought some coconut flour and I am having a bit of a hard time finding recipes. This is because any recipe using 100% coconut flour calls for a lot of eggs to make up for the lack of gluten, otherwise the recipe would supposedly fall apart. I am happy to mix with other flour and not use eggs, but it would be nice to have some advice because from what I've googled it sounds like coconut flour can easily go wrong...

I am thinking it would be neat to make in a banana bread of some sort, but I am open to hearing anyone's experiences with it. And if you are just discovering it like me, how cool is it that you can buy coconut flour?! :D

I was eying that up last time I was shopping. I don't have any recipes, however I have been recently experimenting with gluten free baking. I know guar and xanthan gums are useful binders in GF baking. About one teaspoon per cup of flour, from what I understand. That may do the trick. Having something to make it more moist, like fruit puree (yay, banana bread!), really helps GF too, though coconut flour may have some magical properties that I'm not aware of. Hmmm, I'm interested in this coconut flour business... Anyone know of actual recipes or have experience with this new-to-me flour?

Chocolate Cake

    1/2 cup butter or coconut oil
    1/4 cup cocoa powder
    1/4 cup coconut milk
    9 eggs
    1 and 1/2 cups sugar
    3/4 teaspoon salt
    1 teaspoon vanilla
    3/4 cup sifted coconut flour
    3/4 teaspoon baking powder
    frosting

Melt butter in a saucepan over medium heat.  Add cocoa powder and coconut milk and mix together.  Remove from heat and set aside.  In a bowl, mix together eggs, sugar, salt, and vanilla.  Stir in cocoa mixture.  Combine coconut flour with baking powder and whisk into batter until there are no lumps.  Pour batter into greased 8x8x2 or 9x9x2-inch pan.  Bake at 350 degrees F (175C) for 35 minutes or until knife inserted into center comes out clean.  Cool and cover with frosting of your choice.

Honey Muffins

This is a basic coconut four muffin recipe you can use to make a variety of muffins.

    3 eggs
    2 tablespoons butter, melted
    2 tablespoons coconut milk or whole milk
    3 tablespoons honey
    ¼ teaspoon salt
    ¼ teaspoon vanilla
    ¼ cup sifted coconut flour
    ¼ teaspoon baking powder

Blend together eggs, butter, coconut milk, honey, salt, and vanilla.  Combine coconut flour with baking powder and thoroughly mix into batter until there are no lumps.  Pour batter into muffin cups.  Bake at 400 degrees F (205C) for at least 15 minutes.  Makes 6 muffins.

Pecan Muffins
Make Honey Muffins as directed and add ½ cup of chopped pecans and 1/8 teaspoon almond extract.

Blueberry Muffins
Make Honey Muffins as directed and add ½ cup of fresh blueberries and 1/8 teaspoon almond extract.  Blueberries should be dry.  If rinsed, dry before adding to batter.  Bake for 16-18 minutes.

Lemon Poppy Seed Muffins
Make Honey Muffins as directed but omit the vanilla and add 2 teaspoons of lemon extract.  Sprinkle poppy seeds on top of muffins just before baking.

COCONUT MILK PANCAKES

INGREDIENTS:

2 eggs
2 Tablespoons coconut oil or butter, melted
¼ teaspoon coconut extract or vanilla
½ cup coconut milk
1 teaspoon sugar or rapadura
1/8 teaspoon salt
3 tbsp sifted coconut flour
1/8 teaspoon baking powder

DIRECTIONS:

In a bowl, blend together eggs, oil, coconut extract (or vanilla), coconut milk, sugar and salt. In another bowl, combine coconut flour and baking powder and mix thoroughly. Combine dry ingredients with wet to form a smooth batter. Heat 1 Tablespoon of coconut oil in a skillet or on a griddle. Spoon batter onto hot surface, making pancakes about 2 ½ - 3 inches in diameter.

Makes 8-10 pancakes.

I found these on the internet and haven't tried it yet. Let me know if they turn out.

I just made the honey muffin recipe posted above (veganized with egg replacer, etc) and I have to say, it was terrible. The consistency was awful and I had to add more flour, which didn't help because when they baked (for more than 15 minutes) they were still soft and uncooked inside. Just a head's up that they might need some adjusting if anyone decides to make them.....
