Back when I was a kid and my family was broke, we used to eat something my dad made called "cottage cheese noodles" which is exactly what it sounds like. It was seashell pasta, cottage cheese, sautéed onions, and salt.

Disgusting as it might sound, I keep craving it lately. Blame hormones. Anyway, is there anyone out there who has an idea on how I might replicate this? Obviously the only thing that needs replacing is the cottage cheese, which I've never heard of a substitute for.

To replace cottage, I would use crumbled tofu. Add fresh lemon juice, maybe some fresh basil or parsley. You could add a tablespoon of nutritional yeast to it as well. This will be pretty dry, so I would make a roux using "butter" and flour, then add your onions and saute until translucent or caramelized add crumbled tofu and a little plain/unsweetened soymilk. Stir constantly until it starts to thicken a little Season with salt, pepper, fresh lemon juice and nutritional yeast, top with fresh basil/parsley.

Probably won't taste exactly like it, but it should hit the spot :)

my mom's lasagna had cottage cheese in it and i looved it... i have been able to use vegan ricotta cheese recipes as a sub fine, though.

was the cottage cheese heated for that dish? My mom use to cook it sometimes, and the whey gets all stretchy like other cheese. I like sb's ideas, but if you're looking for the cheese texture too, I'd add some shredded daiya mozzerella to the mix as well.

We ate a lot of cottage cheese noodles too. My mom always added dill or chives, gave it a special something.

I've seen commercially made vegan cottage cheese, although I have never tried it.  You can also make your own:

mmmm...

good ideas all around. the tofu idea sounds yummy, but not really anything like the original. and yes, actually it was heated which softened the cheese and gave it a "melty" texture... throwing in some daiya would be good. actually today i was eating "teese" cheese and it gets all crumbly, closer to ricotta but still...

where have you seen commercially prepared vegan cottage cheese? I live in ann arbor, the vegetarian mecca of michigan and ive never seen or heard of it. honestly though, i would rather try to make my own.

where have you seen commercially prepared vegan cottage cheese? I live in ann arbor, the vegetarian mecca of michigan and ive never seen or heard of it.

I saw it at Whole Foods but it was a while back so I don't remember the brand.  :(

Hmmmm... well I've never seen it at the Whole Foods right by me that I usually shop at, but there is another one about ten minutes away that I could try. Maybe they carry different product at different stores.
