The Church of Seitan

I discovered gluten and for me it is pure manna. To think that you can squeeze and ring a mass of dough and get pure protein, something that looks just like steak, and not worry as much about fat is rather amazing. I begin to think of a gluten revolution about the world. Growing wheat to feed the hungry instead of animals for slaughter just seems more natural. I have made gluten a few times and it just gets more amazing and versatile. I tried it as meatloaf, burgers, stroganoff and broccoli stir-fry. Tomorrow I make Nola red beans and rice with it.
This amazing, perhaps even divinely given, food; why is it not serving humanity as I think it can?

great post! I feel the same about my seitan....i worship it completely.
Sadly there is a significant portion of the world that can't eat wheat due to allergies or celiac disease. Sigh, I have never even tried it because it would make me very ill.

I never made it when I lived in the UK as I couldn't get hold of vital wheat gluten. When we moved to NZ 6 months ago, I think I made it within about 2 weeks of moving into our house - and I make it very regularly now. Srsly I can't imagine my diet without it now - I love it.
I love baked seitan, I love simmered seitan, I love seitan sausages, I love seitan burgers and seitan ribz - that's all I've tried so far (I think)

everyone here should give me samples of their godly seitan, because every time i have made it (3 or 4 times) it is palatable but funky. i want to fall in love with it despite it's headache-inducing (for me) effects.

I made the Seitan o Greatness and it was amazing, given I did forget the tomato paste but it was awesome. I had it in a sandwich, sliced thin with creole mustard. For dinner, I stir fried it with peppers and onions with flaxseed tossed over it.
oh yeah....that seitan o' greatness......mmmmm - try it on pizza!!!
