Chessy Enchiladas, to PRE-prepare, or not?

In the wake of  cooking more vegan foods at home, and less of the Boca products, I was wondering what I can pre-cook, and what I should not.

Today, I specifically ran into this awesome receipe fo Cheesy Bean & Cheese Enchiladas.

Can I precook these tonight to serve tomorrow?  Or at least prepare them, so my significant other can just pop it in?

ive made them and then eaten them both the night of, and for leftovers for the following days.  they were good, but i used pretty hearty tortillas... just plain flour ones might get too soggy.  that'd be my only worry, otherwise they still tasted great.

I haven't tried pre-cooking that recipe, but I've made it and frozen portions.  It thawed and reheated well.

I have made the recipe, baked it, then put it in individual serving containers in the freezer.  It was quite good re-heated (I nuked for 2-3 minutes for a single serve).  I used flour tortillas and everything held up well.  I say go for it!
