Carrot cake recommendation for kids.

It is almost my daughter's bunny's first birthday. She is so excited that her "baby" is turning one. I was going to make some carrot cupcakes and let her share them with friends after school. (The bunny gets carrots and cilantro, his favorites.) I don't have money for ingredients to try out a bunch on recipes. Does any one know of a good carrot cake recipe, here or otherwise, that would go over well with the kindergarten crowd. These kids eat healthier than most, and there are 2 kids with dairy restrictions too, but they are far from used to healthy-tasting or fancy desserts. Thanks.
Trying to remember if you have my first book (Radiant Health, Inner Wealth) - if so, my recipe for carrot cake has been kid tested many times. In fact, I served it at my daughter's 3rd birthday & everyone loved it. If you don't have my book & can't afford to buy it, I can also just email you the recipe if you'd like it. It's dairy free/vegan of course.

Thanks. I have both of your books and love them!! I even plan to give my mother (who is no where near vegan) a copy of your first one for Christmas. I don't make desserts much, because I have virtually no control over my overeating of such things, so I totally forgot that recipe was in there. We may just have to use that one. Thanks.

I have tried both Quintess's recipe and the Carrots and Nothing Else cake and you can't go wrong with either one. :)
