Can I freeze the Tofurkey recipe from this site?

This is my first year making a homemade Turkey sub. I just bought the ingredients for this one . However, it seems like it will make a lot....five boxes of tofu...

I am not feeding this to a large group, just me and my kids. So I am wondering if anyone has had success freezing the leftovers.

Haven't tried it, but expect a major texture change.

I haven't tried freezing it. But, when I've made it, I froze the tofu first....so maybe the consistency wouldn't change?

Also, you could just scale down the recipe. There are a couple of comments where people did that with success.

I have cut this recipe in half and it works out fine.
