Broccomole Recipe (Made with Broccolli instead of Avocados)

Ever wonder what to do with all the broccoli stalks that you cut off when using the broccoli tops?

This Broccomole recipe is a great alternative to guacamole and is naturally low in fat and high in vitamins and antioxidants.

This recipe is from "The Cleanse Cookbook" by Christine Dreher, CCN, CCH. The Cleanse Cookbook is  a great vegan, cleanse friendly recipie book that also includes pH testing information and much more.

Broccomole
(made with Broccoli instead of Avocado!)

1 1/2 Cups Broccoli Stems, well cooked
1 1/2 Tbs. Lemon Juice, freshly squeezed
1/4 tsp. Cumin
1/4 tsp. Garlic Powder
1/2 Tomato, (vine ripened, low acid), diced
1 Green Onion, peeled and chopped
1 Green Chili Pepper, chopped

Cut off the tough outer skin from broccoli stems. Place the broccoli stems, lemon juice, cumin and garlic powder in a blender or food processor and puree until smooth.

Christine prefers to blend the tops from the green onions and the green pepper with the broccoli in the food processor for a smoother consistency and greener color. Save the white part of the chopped green onions to add with the remaining ingredients.

Transfer to a bowl. Add the remaining ingredients and mix well. For best flavor, chill before serving. Makes 2 cups or 8 servings.

If you like it spicy, try adding a jalepeno pepper (whole, with seeds) or cayenne pepper to taste. You can add some sea salt to taste too if you are not on an interal cleanse program diet.

Per serving: 14 calories, 1g protein, 0.1g fat, 3 g carbohydrates, 0 cholesterol, 5 mg. sodium. This is a fat free version of Guacamole. (Avocados have approx. 30 g of fat each.) So if you are trying to loose weight eat broccomole and if you are trying to gain weight, eat guacamole.

To keep the fat content down, you can serve it with baked chips or raw veggies. Enjoy!  :)
