Breading--HELP!!

:-\ So I tried to make Cauliflower Manchurian...DH actually asked me for a new cauliflower dish! As usual, the breading all fell off in the pan. Same thing happened when I tried to make the General Tao's Tofu everyone raves about. What is it with me and breading? Why won't it stick?
Cornstarch makes your breading crunchy. As far as making it stick, I'm not sure. I've had success using several methods of breading things to fry. One of my favorites is to dip it in a mixture of soymilk and dijon mustard, then onto a flour mixture.
Yeah, I'm starting to think that batter isn't my thing. Back in the days when I fried fish it was just dipping the wet beast in the dry crumbs and sort of patting them on firmly. I will try this next time, cooking the cauli slightly and then dredging in seasoned flour. Rice flour gives a nice crunch, too.
