So I made this (my first bread ever!) and oh is it wonderful. I tweaked it a little; I added in a bit of cinnamon, dried cherries, and raisins. The nuts I chose to use was pistachios and almonds.
I normally make this with purple cauliflower, because my school colors are purple and gold...and I think purple cauliflower is more nutritious. Included pics of the purple goodness. Oh so yummy. :)
I'm trying to have a less-expensive thanksgiving this year, so if this is cheaper then a tofurky (which I think it is), I'm going to use this as my main dish this year.
I made this yesterday at lunch, using tiny squashes that I got at the farmer's market. I think I either over cooked the squash, or the flesh wasn't the right firmness for this dish.
I would make this if it didn't require dirtying up so many dishes. Is it at all possible to just cut up all the veggies, layer them in the dish, and bake?
I really want to make this (maybe as a sushi roll?), but I don't have a juicer. Is there another way I can make carrot pulp? Would putting it in a blender and then straining it work?
