I havent baked these yet, but I formed the patties and stuck'em in the freezer for later. But judging from the licked batter bowl, tastes pretty damn good. ;)b Super easy too
One reason for soaking would be to dislodge any nasty stuff from the skin of the almonds; which is why the soaking water after a good soak is usually brown. I wouldn't drink that, probably bitter
Maybe the yogurt is the problem in the recipe; agar supposedly doesn't work well when mixed with acidic ingredients, but I haven't tried this recipe, so I can't check.
