These came out so perfect! Very soft and airy- I was going to use flax seed for the egg replacer but decided not to and used the last of my soy yogurt and I am glad I did!

Loved this recipe! Its also kid proof- my 3 yr old niece made them all by herself and even with the not so accurate measurements they still came out awesome!
I actually put the flaxseeds right into the boiling water and simmered for 15 minutes or so. Then I just put a strainer over a bowl and pour the mixture in and it strained pretty well.
I actually ended up mixing some hemp milk with veganaise which worked nicely. I love eggplant but wasn't a fan of it in this for some reason- but loved the potatoes!
