I'm tempted to make this with my tofu scramble recipe but that might be because I have had a craving for the scramble for a week.. I can't wait to experiment with the fillings. <3

I love these! The only changes I made was to add a can of pinto beans (I wanted to double the recipe and that's what I had) and a couple of pinches of crushed red pepper.
I can't wait to experiment with the fillings. <3
