I have finally found a good vegan mac n' cheese recipe...this one is a keeper.  My part-time vegan mother and 2 yr old son liked it too.  Tastes like the real thing, just made it tonigh

Very flavorful and not too strong, the spices really complement each other nicely.  I halved the cumin since it can be overbearing.
